Blue cheese is a bold and distinctive variety known for its striking veins of blue and green mould, which develop during the ageing process and give it a sharp, tangy flavour. Made from cows, sheep, or goat milk, it can range in texture from soft and creamy to firm and crumbly.
Its unique taste, often described as salty, pungent, and slightly spicy, makes it a favourite for adding depth to salads, sauces, and dressings, or simply enjoyed on its own with fruit or crusty bread.
