Bourgogne Vincent Girardin, Supple red burgundy from vineyards neighbouring Volnay and Pommard. Bright red cherry and raspberry fruit aromas lead to a lively, mediumbodied palate enhanced by the subtlest touch of spicy oak. Alcohol content 13%. 100% Pinot Noir Grape.
This dynamic grower-turned-négociant moved from Santenay to large premises in Meursault a few years ago, and quality has moved up a gear with him. Girardin is now doing the opposite of many producers: reducing volume and raising standard. For example, he now refuses to buy from growers who use insecticides or herbicides, part of his own move towards a biodynamic approach. Vineyard, this Bourgogne comes from eight hectares of forty-five year old vineyards around Volnay and Pommard, in the heart of the Côte de Beaune. The soil is clay-limestone and the yields limited to 40hl/ha. The grapes are harvested by hand. Winery After a double selection, the grapes were partially destemmed and fermented with natural yeast in temperature-controlled stainless steel tanks. Sixty percent of the wine was racked to tank, and forty percent to barrel, with ten percent new wood, for malolactic and fourteen months’ ageing.
