Stithians, the newest cheese to come from the Lynher Dairies near Truro (of the Cornish Yarg fame!). So .... if they Yarg is all about the leaves, then Stithians is all about the lack of them! Named after the local village and affectionately known in the dairy as the 'naked one' Stithians came about out of sheer curiosity .... what would happen if they didn't wrap the batch in leaves but left it to mature when it came out of the brine.
The answer turned out to be a deliciously rich and creamy cheese with a rounded flavour with a characteristic clean tang. Showing off an array of wild mould, just as nature intended, it produces a rind which can vary in colour from a creamy yellow when young to a pinkish bloom when left to develop.
