Cashel Blue is a wonderful creamy, award winning, farmhouse blue cheese handmade on the Grubbs family farm in Tipperary, Ireland where they have been farming and involved in agriculture since 1719! The cheese is named after the Rock of Cashel where folklore has it that St Patrick started converting the pagan Irish to Christianity.
Made with pasteurised milk, Cashel Blue is not an overpowering cheese and much less salty than other blues. Best described as "characterful but not strong". Incredibly versatile the cheese can work very well with a host of dishes, especially a juicy steak! Rumour has it that it has been served up in dishes in Downing Street and The White House ......
