Fosse Way Fleece, an award wining, artisan sheep's milk cheese made by the Somerset Cheese Company. The Fosse Way Fleece cheese has a lovely smooth and silky texture with a fresh and clean, slightly nutty taste. As with the majority of sheep's milk cheeses, the flavour is relatively mild with a gentle sweetness. This hard cheese would make a great British alternative to Pecorino.
Fosse Way Fleece actually takes it's name from the old Roman "Fosse Way Road" which runs close to the village of Ditcheat where the dairy is situated.
