Cornish Blue cheese, a truly artisan blue cheese handmade on Bodmin Moor since 2001. As a handmade product, much of the skill in producing the cheese lies with a team of highly trained team of artisan cheese makers. Cornish Blue is a vegetarian, pasteurised, cow's milk cheese which is dry salted by hand before being left to mature between 12 and 14 weeks.
Designed to be eaten as a young cheese, Cornish Blue is a very different product from traditional English blue cheeses. The flavour is mild and creamy with a dense texture and buttery richness, instead of the 'salty tang' common of other traditional blue cheeses it has a gently sweetness. Best enjoyed at room temperature this Cornish Blue is a great additional to your cheeseboard, simply enjoyed on crusty bread with chutney and a glass of port. It's a versatile cheese and the sweet mild flavour is the perfect compliment to many recipes and sauces.
