Lyme Bay Brut Reserve Sparkling A fruit driven, dry, sparkling white wine with refreshing lemon and green apple notes with a vibrant and creamy mousse finish.

Wine Making Notes The fruit was hand harvested from the 1st to the 5th October 2014 at the point of optimum flavour ripeness. The grapes were carefully de-stemmed and crushed, then gently pressed to preserve the delicate flavours. After cold setting to remove any solids, the juice was fermented at cool temperatures using a specially selected yeast to maximise the varietal character. Following fermentation the wine was gently racked, then left to age for 4 months on fine lees to improve structure and mouth feel.

East Devon enjoys a temperate climate with a long, warm growing season. Their search for the right land for the vineyards took a while but in 2010 they planted 26,000 vines and with hard work and dedication they were rewarded with an excellent first harvest in 2014.
