Made from the rich unpasteurised milk from the Franche-Compte region this glorious cheese will delight the taste buds! A definite MUST for the 'cheese-lover' ... superbly rich and creamy with notes of spruce from the bark ring encircling the cheese. Best served warmed in its own box when it becomes super-oozy .... hence its nickname 'the spoonable cheese'. There are strict rules for the production of this AOC cheese, the raw milk can only be from the cows of the Montbéliard and Simmentaler breeds and it is only available between the months of September and March each year. To shape the Vacherin, it is rounded using a ring of Spruce bark and ripened on a Spruce wood board, taking at least three weeks producing a voluptuous texture that is indescribably creamy and gorgeous!
