Brebiou, a superb, silky smooth soft artisan ewe's milk cheese made in the Pyrenees region of France. This cheese has a wonderful soft texture with a smooth firm paste and a velvety, bloomy rind. The creaminess of the sheep's milk combined with the rich green pastures give Brebiou a slight smell of fungus with a sweet milky taste that becomes more tart towards its centre.
