Posbury, this flavoured semi-hard unpasteurised Goat's cheese is made near Crediton in Devon. Using the washed-curd process (the curds are washed in hot water up to 3 times then drained) to give a sweeter 'Dutch style' cheese, garlic, onion, horseradish and paprika are then added to give a subtle sweet spiciness to the flavour (but not at all overpowering as you would think!) and a light buttery texture.
Handmade by Dave and Marilyn Johnson at the Norsworthy Dairy just outside Crediton from their herd of Saanen, Toggenburg and British Alpine Goats. The herd was originally established back in 1999 with 40 'day old' kids, 12 months later they were producing milk and over the following 2 years the herd expanded to over 90 milkers and cheese production started in ernest in 2002.
