A traditionally made cloth bound, farmhouse cheese matured in the caves at Wookey Hole, Somerset for up to 6 months resulting in a deliciously smooth and mature cheddar.
Made in Dorset at Ford Farm (who also make a fabulous smoked cheese, the Dorset Red) this cheese is made using pasteurised milk and vegetarian rennet before being wrapped in cloths and transported to the caves. This award winning authentic handmade cheese is protected by the DPO (Protected Designation of Origin) whereby it can be manufactured only in the counties of Dorset, Somerset, Devon and Cornwall.
