Brie de Meaux, probably the most famous of all Brie's, is named after the French village of Meaux situated approximately 50 kilometres to the East of Paris. Brie de Meaux is a raw, soft, unpasteurised cow's milk cheese with a bloomy rind and a rich and creamy taste underlined by the sweet buttery flavours of mushrooms, truffles and almonds. Although true for most cheeses, it is important to allow this cheese to come up to room temperature before serving to truly appreciate the depth of flavour!
