Cashel Blue is a wonderfully creamy, award winning, farmhouse blue cheese made on the Grubbs family farm, Tipperary, Ireland where they have been farming and involved in agriculture since 1719! The cheese is named after the Rock of Cashel where tradition has it that St Patrick started converting the pagan Irish to Christianity.
Made with pasteurised milk Cashel Blue is not an overpowering cheese and much less salty than many other blues and quite a pleasant introduction to blue cheese. Incredibly versatile the cheese can work very well with a host of dishes, especially a juicy steak! Rumour has it that it has been served up in dishes in The White House and Downing Street!
